A BRIEF HISTORY The Glenturret Distillery Est Nowhere has the phrase time-honoured been used more appropriately than at a workplace with a heritage dating back to That s the year before America achieved its independence; a time when Robert Burns was still in his teens. From our base in the heart of the Crieff community, with our open-top mash tun and Douglas Fir washbacks, we have a genuine reverence for tradition. Elsewhere there may be respect, but that s not enough for us. Although the rest of the world has moved away from mashing by hand and cutting by eye as vital components of the whisky-making process, we re holding on to them (and our rouser) with great tenacity. A genuinely handmade small batch product, The Glenturret doesn t require many pairs of hands to produce it; just 5 to be precise. The small number of employees creating our whisky are no button-pushers. Theirs is a craft of the highest quality small batch production and the variety that brings, rather than the consistency of large scale production. A quality that forms the beating heart of Scotland s favourite Blended Scotch Whisky, The Famous Grouse. The Glenturret is a lovingly made malt. The quality of our pale, golden-lemon malt, with its delicate flavours of orange zest and vanilla, sings out. Our ethos shines as brightly as the whisky itself: By hand and by heart, is how we like to put it. 3

THE PRODUCTION METHODS The Distilling Process MALTING AND MILLING We source our high quality malt from Simpsons Malt on the Scottish borders, and our pure water from The Loch Turret which is situated just 3.5 miles from the distillery. The malted barley is fed into our original grist mill to be ground until it resembles coarse flour. MASHING The Glenturret mash tun is the last remaining hand-operated mash tun in Scotland, with mashing done by hand with a wooden rouser. This approach allows for greater control of the mash which in turn allows for more sugars and thus more alcohol. FERMENTING The Glenturret wash backs are made from Douglas Fir. Stainless steel would be longer lasting but we believe in maintaining this traditional approach. We have a particularly long fermentation time of up 100 hours which helps to build The Glenturret s distinctive fruity characteristics. DISTILLING Our stills have a shape and size unique to The Glenturret Distillery. Our tall wash still creates a very light spirit and we continue to use traditional pot stills made of hand-beaten copper. The most significant part of The Glenturret distillation process, is that we run our stills very slowly. This slow distillation helps to build sweeter, lighter characteristics in our new make spirit. Our stillmen use the skill and judgement built up over generations of experience to cut the spirit by eye using our hand operated spirit sample safe. FILLING The heart of the run is pumped from the still house to the filling store, where the strength of the new make spirit is reduced by the addition of Loch Turret water before being hand filled into oak casks. MATURATION The casks are stowed in our warehouse and left undisturbed until we feel that the whisky has matured to perfection. 4
5 3. THE WHISKIES SHERRY EDITION The Sherry Edition has been matured in both Spanish and American oak sherry seasoned casks, delivering a sweet spiciness with a soft oak background. Homemade syrup sponge meets the nose with a sweetness and warmth that invites you in. This taste is of puff candy layered with aromatic sandalwood and smooth, sweet spices. APPEARANCE: DEEP BURNISHED GOLD, CLEAR AND BRIGHT. AROMA: HOMEMADE SYRUP SPONGE MEETS SWEETNESS AND WARMTH. TASTE: PUFF CANDY LAYERED WITH AROMATIC SANDALWOOD AND SMOOTH, SWEET SPICES. FINISH: MEDIUM SWEET, GOOD LENGTH WITH LINGERING SPICINESS. TRIPLE WOOD EDITION A combination of American sherry oak, European sherry oak and American bourbon oak casks have been used to create the distinct oaky flavour of the Triple Wood Edition. The aroma is a fragrant mix of orange peel, vanilla and peardrops with a taste of cedarwood, cinnamon coated marzipan and a hint of coconut. The lingering oakiness finishes this exclusive dram. APPEARANCE: DEEP BURNISHED GOLD, CLEAR AND BRIGHT. AROMA: FRESH ORANGE PEEL, VANILLA AND PEARDROPS. TASTE: CEDARWOOD, CINNAMON COATED MARZIPAN AND A HINT OF COCONUT. FINISH: LINGERING OAKINESS. PEATED EDITION The Peated Edition delivers a heavy smokiness through the use of malted barley dried over peat fires, a taste akin to the whisky produced when the distillery first got its license in A warm bitumen and freshly baked brownie aroma is followed in taste by a sweet, smoky flavour with slight salty notes. APPEARANCE: DEEP BURNISHED GOLD, CLEAR AND BRIGHT. AROMA: WARM BITUMEN AND FRESHLY BAKED BROWNIE. TASTE: SWEET, SMOKY FLAVOUR WITH SLIGHTLY SALTY NOTES. FINISH: LINGERING SOFT PEAT. 5

THE WHISKIES (CONTINUED) AGED 10 YEARS AGED 18 YEARS 26 YEAR OLD Very popular and admired by whisky lovers, The Glenturret 10 year old has notes of nuttiness, fruit and herbal tones and a splash of honey. Very much a rich and fruity malt, the sweet undertones shine through from start to finish. APPEARANCE: PALE LEMON GOLD. AROMA: SPICY CITRUS WITH A MILD PEAT AROMA. TASTE: VERY SOFT, MATURE ORANGE ZEST WITH VANILLA. FINISH: DRY, LIGHT AND FAIRLY SHORT WITH CEREAL AT THE BACK. This single malt was hand-picked by our Master Distiller for its remarkable quality & elegant character. As one of only 516 bottles, these rare bottlings are highly coveted and are beautifully packaged with a numbered certificate of authenticity. APPEARANCE: DARK STRAW. AROMA: CARAMELISED PINEAPPLE, GOLDEN SYRUP AND VANILLA SPONGE, ORANGE ZEST AND CINNAMON BARK. TASTE: CEDAR WOOD, VANILLA, GINGER ROOT AND ORANGE PEEL. FINISH: LINGERING SPICINESS. A rare limited edition of The Glenturret and currently the oldest available expression in our range. Created in partnership with Hunter Laing & Company Ltd this fine single malt is presented in a wooden box with a certificate of authenticity. APPEARANCE: GOLDEN TO DARK STRAW IN COLOUR. AROMA: SWEET, FRUITY NOTES SUCH AS TOFFEE APPLES, MILK CHOCOLATE AND CARAMEL. TASTE: SWEET WITH SHERBET, SOME GENTLE SPICE AND TOFFEE NOTES. A genuinely handmade whisky crafted with passion and care, the 216 bottles of this limited edition sold out within months of release in APPEARANCE: DEEP, BURNISHED GOLD, CLEAR AND BRIGHT. AROMA: OLD POLISHED WOOD, FRESH ORANGE PEEL, WALNUTS WITH ORANGES AND HINT OF JASMINE WHEN DILUTED. TASTE: MELLOW OAK, SPICY (GINGER) AND VANILLA. FINISH: MEDIUM SWEET, GOOD LENGTH WITH LINGERING SPICINESS. THE VISION FOR GLENTURRET Stuart Cassells, General Manager of The Glenturret has a vision to preserve the artisan methods of whisky making that have been celebrated at Glenturret Distillery for over 240 years is an exciting time for the distillery s award winning Glenturret Single Malt and plans are now underway to celebrate the historic dram. Stuart commented: The original vision of James Fairlie, who rejuvenated Glenturret Distillery in the 1950s, was to preserve the traditional art of making whisky and this is something that I believe we need to maintain and celebrate. Today, Glenturret Distillery continues to showcase traditional methods of whisky production, crafted By Hand and By Heart, which offer an authenticity that is rare to behold. In recent years, interest in our beautiful Glenturret single malt has grown. This is something we are celebrating and we are looking forward to bringing our single malt to new audiences through some exciting launches for our Glenturret range in

DISTILLERY MANAGER: NEIL CAMERON Over a career that now spans three decades, Neil has amassed a wealth of knowledge and expertise in whisky production that has been accumulated through working at a number of different distilleries, gaining experience of all aspects of whisky production including mashing, distillation and bottling. By 1990, then a fully trained stillman, and armed with a General Certificate in Distillery, Neil joined Highland Distillers, later part of Edrington. His first role in the company was in the warehouse at Parkmore, Dufftown. In 1995 he progressed to the role of brewer at Glenturret Distillery and in 1997 he was promoted to his current role of Distillery Manager. PRODUCTION SUPERVISOR: IAN RENWICK In 1996 Ian officially joined the distillery team as a stillman, a role he learned on the job while working alongside other experienced pairs of hands. Ian s previous experience in engineering has proved invaluable and he continues to make unique tools for the distillery, most notably the traditional hand crafted wooden rousers used for hand mashing. In 2003 Ian was promoted to his current role of Production Supervisor in which we works closely with the Distillery Manager to ensure that every drop of Glenturret is lovingly hand crafted to quality standards developed over hundreds of years. 9

STILLMAN: BRIAN GARRIOCK Joining Edrington in 1997, Brian has a true blend of Edrington s most famous malts running through his stillman hands. His first role as a stillman saw him take on the mighty Highland Park in Orkney, a three times winner of the Best Spirit in the World. He then spent some time in Speyside at the world famous Macallan before finally finding his home at Scotland s oldest working distillery, Glenturret in STILLMAN: KENNY SMITH A truly multi-skilled craftsman, Kenny s first job started his career as a trainee glassblower at local Crieff firm Stuart Crystal before taking on an apprenticeship to become a butcher, a path he followed for many years. On leaving butchery Kenny ventured into the construction industry and his first introduction to Glenturret was actually in working on the distillery s car park! However in 2005 an opening for a new stillman caught his eye. He applied and began his training as one of Glenturret s five pairs of hands. STILLMAN: IAN SMITH In 2010 Ian joined Glenturret Distillery, taking on responsibility for maintenance of the site. From grain to grist, Ian was fascinated by the traditional process of making Glenturret whisky and, in 2012, undertook a course to gain a General Certificate in Distilling. He passed with distinction and, having gained hands on experience at the distillery, became a full time stillman in
11 6. THE SPIRITUAL HOME The Famous Grouse Experience at Glenturret Distillery The story of The Famous Grouse is as rich and absorbing as the whisky itself. It stretches back to 1800, when the local store Matthew Gloag & Son opened in Perth, Scotland as a wine merchant and grocer. It wasn t until 1905 that The Famous Grouse was born. More than a generation had passed and Matthew (great-nephew of the first Matthew Gloag) blended a whisky combination so popular that he aptly added Famous to the name. Glenturret and The Famous Grouse did not join forces until 1990 when the Distillery was bought by Highland Distillers, the same company that previously acquired Matthew Gloag & Sons in The Glenturret single malt is now an important addition to The Famous Grouse blend, and its oldest distillery is now the spiritual home of Scotland s best-selling whisky a marriage that has strengthened in its 25 year partnership. In 2002 The Famous Grouse Experience at Glenturret Distillery opened offering a 5-star visitor experience. Welcoming over 80,000 visitors every year, The Famous Grouse Experience offers distillery tours, whisky tastings and the chance to see the world s largest bottle of whisky, holding a massive 228 litres (or 8,000 drams). Bottle your own Glenturret A new addition to our recently refurbished visitor area. The Bottle Your Own Experience is where visitors can create their own bottle of whisky from a single cask of limited edition Glenturret malt to bottle, sign and date, then take home and keep. During their visit in 2014, The Duke and Duchess of Cambridge had the honour of being the very first visitors to produce the first bottle from a Glenturret single cask, which was named the Earl and Countess of Strathearn Cask, the Royal couple s Scottish title. Now an integral part of the distillery, the Bottle Your Own experience has continued to grow in popularity since the first bottle was poured. As a fitting celebration of its launch, and the distillery s Famous roots, every new limited edition cask is now named after a Famous name from the surrounding area. The most recent casks have been named after Hollywood actor and Crieff-local Ewan McGregor and tennis superstar Andy Murray. 11

KEY DATES 1717 Glenturret is the site of several illicit stills because of its convenient location for the Perthshire water and being a good vantage point to look out for the law coming to stop the illegal activity Established as a fully-fledged, official single malt distillery by John & Hugh Drummond Alcohol is prohibited in the United States, having an impact on the trade all over the world Glenturret ceases trading and the distillery falls silent New life is injected into Glenturret when the distillery is bought by James Fairlie The distillery is visited by the Prime Minister of the time, Sir Alec Douglas-Home Glenturret opens its doors to visitors The distillery is bought by Highland Distillers Glenturret has its one millionth visitor Towser s famous statue is unveiled outside the distillery The Famous Grouse Experience opens its doors at Glenturret, its new spiritual home. The Experience goes on to win a BAFTA and a Visit Scotland award for its interactive tour The distillery produced the largest bottle of whisky in the world, a Guinness World Record, a 200 litre bottle of The Famous Grouse that holds 8000 drams The Duke and Duchess of Cambridge visit the distillery and launch the Bottle Your Own experience. 12
