3 UNIT A: POULTRY ABATTOIR (SLAUGHTER) FACILITIES UNIT I Poultry Abattoir (slaughter) Procedure Brief Instruction 1 Living Poultry Collection And Hanging Unit 1.1 The veterinarian have to inspection all living poultry whether there are any sick poultry when un-loading from truck and convey to hanging on over head convey rail, if there are some sick poultry should keep the sick poultry on truck and take back to farm for further inspection. 1.2 When the living poultry finished inspection then convey poultry cage through conveyer to living poultry hanging platform for hanging to over head convey rail 1.3 The living poultry hanging unit will separate from poultry bleeding unit in order to avoid some dust and small feather fly to blood collection tank, this can keep complete slaughtering plant cleaning. 1.4 When the cage arrived in correct position then beginning take poultry from poultry cage and hanging on over-head convey rail for killing, and each worker can hang poultry per hour. 1.5 The idle poultry cage will be send back to farm for chicken transport when cleaning 2 Living Poultry Killing And Carcass Processing Unit 2.1 The main procedure of poultry killing and bleeding unit as Living poultry stunning Poultry neck killing Poultry bleeding Poultry scalding Poultry plucking Poultry claws removed Poultry claws un-loading Poultry claws un-loading Poultry carcass reception and re-hanging 2.2 The distance of poultry hook: 6inch (192mm), the overhead convey rail are complete adopt the standard driving chain, the distance of chain: 25mm (speed adjustment type), the speed of overhead convey rail is according to capacity of slaughter plant which customers require. 2.3 Living poultry stunning: As normal if the slaughter plant is not require Islamic Halal slaughtering tradition, the living poultry will be stunned with water type numbing machine for convenient to killing and bleeding, the shock voltage of stunning machine: 70-90V, Numbing time is: 2-3s, if the poultry without numbing procedure, the living poultry must killing after convey 1 meter on overhead convey rail. 2.4 Poultry bleeding: As normal bleeding time is 3-4min. 2.5 Poultry scalding: When the poultry carcass complete bleeding then convey to closed type scalding machine for scalding, the temperature of the water is 60-65degrees, and as normal the scalding time is 40-60minutes. 2.6 Poultry plucking: when the chicken complete scalding then convey to plucking machine for feather removed. 2.7 The main poultry evisceration procedure as Poultry brisket opening Poultry evisceration Poultry head removed Poultry carcass cleaning Gizzards skin peeling and de-fat 2.8 The distance of hooks for evisceration unit is 6-8inchu( mm) and adopt the standard driving chain, the distance of chain is: 25mm (speed adjustment). 4 2.9 When the viscera removed from poultry carcass then direct drop to viscera sliding channel and sliding to appoint place for further processing or storage When the poultry carcass finished cleaning then convey to automatic pre-cooling machine, and cleaning poultry carcass before put into pre-cooling machine can well avoid water dirty 3 Chilling Unit 3.1 Poultry carcass pre-cooling way as As normal the poultry slaughter plant used spiral pre-cooling machine to cooling poultry carcass, the temperature of pre-cooling water: C, Pre-cooling time: 45minters When poultry carcass finished cleaning then direct convey to air cooling room for carcass cooling, the temperature of air cooling room is 0 degree, and the pre-cooling time is 30minutes 4 De-Boning And Packaging Unit 4.1 The hooks distance of poultry carcass de-boning unit is 6-8inch and adopt the standard connect chain,the distance of chain unit is 25mm. 4.2 The workers pre de-boning poultry carcass when hanging on convey rail, and then un-loading to belt conveyer for complete de-boning. 4.3 The poultry meat will be packing by vacuum machine, and send toe instant freezing room for blast freezing, the temperature of instant freezing room is 35degree, and the poultry meat will keep in instant freezing room for 8hours, or send to fresh keep room for short time storage, the temperature of fresh keep room is 0-4degrees, and the poultry meat will storage in fresh keep room for 5days at most. 4.4 When the poultry meat finished blast freezing then take out and send to constant freezing room for long time storage, the temperature of constant freezing room 18degree. 4.5 The temperature of poultry carcass de-boning and poultry meat packaging room is C QINGDAO EMPIRE-PROFESSIONAL LIVESTOCK ABATTOIR (SLAUGHTER) & MEAT DEEP PROCESSING SOLUTIONS Page 4 of 13
