about hanging rock beef and speckle park stud The Hanging Rock Story Although the Ellis family have traditionally been better known as the owners of The Hanging Rock Winery, they have always had a love affair with cattle. In December 2010 John & Ann decided to take the leap from cross bred to stud cattle and purchased Jim a very impressive, Lacerta 68L sired Speckle Park bull. They were impressed with the temperament and qualities of the Speckle Park breed and along with their daughter Ruth and husband David have acquired and bred to expand the pure bred herd to a current 22 head. Why Speckle Park Cattle? Speckle Park meat is exceptionally tender and flavoursome, has great marbling as well as even fat cover. One of our draw cards to the breed was that breeders in Canada of Speckle Park beef have won the Calgary Carcass Competition consistently over recent years. Over time we have also fallen in love with the breed s gentle nature and excellent mothering characteristics. Hanging Rock Beef We are currently running a herd of Speckle Park cross cattle for our beef business. Speckle Park meat is available throughout most of the year through the winery s cellar door. We believe that when buying meat you should know as much about that product as you do the bottles of wine we sell. We grow our cross breeds out to 2 years old and they are handled with the upmost care throughout the entire process. Our Animals Come From Speckle Park Royalty From the very beginning we were determined to only use the best breeding stock for their stud. The bulk of our herd carry either the Lacerta or King George genetics.
