White vs. Red Pizza Most people have had red pizza, or pizza covered with red sauce, but have you ever had white pizza? White pizza is made in almost the same way as red pizza: the dough rises and is rolled out, toppings are applied, and it is cooked in an oven, but the key difference is that white pizza does not have any tomato sauce on it. Instead, a white pizza may have olive oil or no sauce at all. I like white pizza more than red pizza because you can really taste the ingredients. Adding some fresh tomatoes to a white pizza will give it that tomato flavor without the completely overwhelming taste of the red sauce that covers most pizzas. If you have not had a white pizza, I recommend that you order or make one today. 1
2 2. Cooking the Perfect Pizza Cooking the perfect pizza at home can be quite a challenge. You may find that it's difficult to get your oven to the right temperature. If the oven is too hot the crust will burn, become hard, and taste bad. If your oven isn't hot enough, the crust may get soggy. Even at the perfect temperature, extra moisture from your ingredients may prevent the bottom of the crust from fully cooking, but don't let oven temperature stop you from building the pizza of your dreams. Get yourself a pizza stone. A pizza stone will get very hot when preheated and will allow your crust to fully cook without burning it. Then you can pile the ingredients on your pizza and have a crispy crust that isn't burned. That's the way to go. 3. Eat More Pizza Pizza is often viewed as a junk food, and it is true that some pizzas are high in salt, fat, and calories, but there may also be some benefit to eating pizza. Some studies have found that lycopene, an antioxidant that exists in tomato products that are often used in pizza, may prevent some forms of cancer. Dr. Silvano Gallus, of the Mario Negri Institute for Pharmaceutical Research in Milan, studied the eating habits of people who developed cancer of the mouth, throat, esophagus, and colon. He concluded that people who ate pizza at least once a week had significantly less chance of developing these cancers. Here's to your health. 4. History of Italy s Greatest Creation Pizza is so old that its origins are not quite clear to historians, but the word pizza comes from the Latin verb pinsere, meaning to press. It may also be related to the Greek word pitta. In any event the word "pizza" was first documented in Italy in 997 AD. Whatever they were eating back then, however, was quite different from the pizza that we know today. Pizza as we know it could not really have been invented until sometime during the 16 th century, when tomatoes were brought to Europe from America. This was big, but in my opinion the greatest development in the history of pizza occurred in 1905, when pizza was first sold in America. The rest, as they say, is history. 2

SIAMESE CAT History Adapted from Cat Breed Encyclopedia The Siamese is considered to be one of the oldest of the Asian cat breeds, and it is believed that the origins of Siamese cats originated from Thailand, formerly known as Siam. This ancient Asian land is the source of the breed s name. These cats were honored in such high regard that no one except the king and members of the royal family were permitted to own them. Pictures of a Siamese cat appeared in the manuscript Cat-Book Poems, written in Siam (now Thailand) sometime between 1350 and Early stories and myths involving the Siamese are plentiful, including fanciful tales that account for the cat s physical traits. No one is sure exactly when the Siamese was imported to Britain or to America. Siamese cats were exhibited in 1871 in the first modern-style cat show at Sydenham, London s Crystal Palace, where they were disparagingly described as an unnatural, nightmare kind of cat. Then the earliest documented account tells of a pair of Siamese cats given to the sister of the British consul general in Bangkok in 1884, who exhibited the cats the following year in London. Despite the unfair, bad press, the Siamese rapidly became popular among British cat fanciers. At that time, the Siamese were noted for their crossed eyes, and kinked tails; these did not become conformation faults until a lot later. The first British standard, written in 1892 and re-written in 1902, described the Siamese as a striking-looking cat of medium size, if weighty, not showing bulk, as this would detract from the admired svelte appearance, also distinguished by a kink in the tail. They will tell you exactly what they think, in a loud, raspy voice, and they expect you to pay attention and act on their advice. Siamese cats are extremely fond of their people. They like to be helpful and will follow you around and supervise your every move. When you are sitting down, a Siamese will be in your lap, and at night he will be in bed with you, probably under the covers with his head on the pillow. Upkeep The Siamese is highly intelligent, agile, athletic, and loves to play. Keep his busy brain active with puzzle toys and his body exercised with teaser toys he can chase and a big cat tree he can climb. Never leave him without any form of entertainment, or you will likely come home to find that he has reprogrammed your DVR to record only nature shows or at the very least decided your toilet paper rolls and tissue boxes look better empty. 4
5 AMERICAN SHORTHAIR History They aren t listed on the manifest, but cats were undoubtedly among the passengers and crew that disembarked from the Mayflower when it arrived at Plymouth, Massachusetts, in Their ratting abilities made cats valued members of ships crews, and they may well have made their way to the New World even earlier, on ships that carried settlers to the Jamestown colony in Virginia, Spanish explorers to Florida and Vikings to Newfoundland. Cats were valued on land as well as at sea. Farmers, shopkeepers and householders all needed a good cat to protect their stores of food from mice, rats and other vermin. The shorthairs were solid, hardy working stock, well suited to the tough conditions that prevailed on the untamed continent. Such good hunters were they that a publication from 1634 credits them with saving a New England colony s crops from squirrels and chipmunks. From their coastal arrival points, they went west with settlers, and thrived. By 1895, shorthairs had made enough of a mark that they were exhibited at the first cat show in the United States. The Cat Fanciers Association recognized them as a breed in To differentiate them from random bred cats, also known as domestic shorthairs, the pedigreed felines were given the name American Shorthair in The cats are recognized by all registries. He has a middle-of-the-road temperament, being calm but not comatose. The American Shorthair is moderately active and enjoys a good playtime as much as the next cat, but he s not overly demanding of attention or activity. As befits a working class cat who has made good, he is smart and enjoys playing with puzzle toys and interactive toys. He has a sociable nature and isn t the type to hide under the bed when visitors arrive. Upkeep 52 The American Shorthair s coat is easily cared for by combing or brushing it a couple of times a week to remove dead hair and distribute skin oils. The thickness of the cat s coat and the amount it sheds vary based on climate and time of year. American Shorthairs like their meals, so they can easily become overweight.
