FILLET The ostrich (Struthiocamelus) belongs to the Ratite family of flightless birds with small wings and flat breastbones. The meat cuts are mainly from the legs, not the breast. KLEIN KAROO The demand for ostrich meat is increasing, now widely recognized as a healthy alternative red meat, similar to beef. It is naturally low in fat and high in protein.

LEIN KAROO ENVIRONMENTALLY FRIENDLY & HUMANE The ostriches are raised to a live mass of about 90kg in natural surroundings on privately owned farms. The producers are responsible farmers, aiming to raise the birds in the most acceptable way according to legislation of EU and DAFF. All ostriches from KKI are bred using good animal welfare protocols. THE FIVE FREEDOMS The five freedoms are part of the good farming practise to ensure animal welfare and cruelty-free farming: Freedom from thirst, hunger, and malnutrition. Freedom from discomfort. Freedom from pain, injury, and disease. Freedom from fear and distress. Freedom to express normal behaviour. NUTRITION OF OSTRICHES Ostriches are fed on pastures such as wheat, alfalfa, and alfalfa hay as well as energy and protein supplements to ensure a balanced ration. This includes energy sources such as maize, barley, oats; protein sources such as soya and canola; and roughage such as bran. Lucerne makes up a large part of their diet. Vitamins and minerals are also added. No animal protein sources are used and no growth stimulants are administered. The meat is free of any systematically administered antibiotics. 5

LESS METHANE GAS The ostrich (Struthiocamelus) being indigenous to the Little Karoo prefers a hot, arid climate. A sign that the ostriches thrive is that they breed very well. One hen can lay 40-60 eggs per season compared with a cow that will only produce a single calf each year which will reach market after two years. The biggest part of the ostrich s diet is Lucerne, which grows excellently in this region, and our gravelly soil contains all the stones necessary which the bird swallows and uses as choppers to grind its food. Its digestive system has a huge environmental advantage in that it produces much less methane gas than other livestock. The ostriches are also much more efficient at converting their feed into live weight than other livestock. They grow quickly which is the key to their survival out on the savannah. The quicker they grow the quicker they can run, and escape predators. 6

The export ostrich abattoir, ZA92, is FSSC 22000 and IFS Food certified. PRE GRILLING The ostrich production has a natural in-and-out-of-season cycle due to the climate and the birds breeding pattern. Thanks to the pre-grilled method we can offer a consistent 12-month availability. The pre-grilling process sears the meat, and heats up the core temperature of the meat to 70 C. It guarantees consistent moisture content, juiciness and tenderness. Our product is compliant with all EU and OIE food safety legislation and regulations. The maintenance of the Cold Chain is ensured with strict monitoring of product temperatures from our processing plant to final destination. Pre-grilled ostrich meat is available regardless of the animal health status of the country. 8 FARM TO FORK TRACABILITY & PRE-GRILLING PROCESSING OF OSTRICH MEAT The birds are slaughtered under humane and halaal conditions. After slaughter, the carcasses are deboned. The utilisable meat, mainly from the leg, is prepared as various primal cuts and portions. KLEIN KAROO The birds are transported live to the processing facility. All ostriches have individual official tags for traceability that makes it possible for the endconsumer to trace the ostrich meat on the plate all the way back to the farm of origin.

COOKING INSTRUCTIONS FOR PRE-GRILLED OSTRICH FILLET AND STEAK Defrost the ostrich meat in the refrigerator 8 hours or at room temperature 3-4 hours. Baste the meat with olive oil. For best results we recommend frying this product and serving it medium. The meat is then still slightly pink inside. PAN 1. Preheat the frying pan. 2. Pour a little olive oil into the pan. 3. Flash Fry the meat approximately 1-1½ minutes per side. OVEN Preheat the oven to 180 C. Place the meat in an oven safe dish and cook for 6-8 minutes. INSPIRATION Serve exotic ostrich meat with a delicious sauce, potatoes and seasonal vegetables.
