Josipovic, Dusica Tomasevic 2 Sadriaj: U cilju ispitivanja faktora znacajnih za rezultate vrednosti randmana klanja, izveden je ogled sa dye grupe junadi priblizno iste mase pre klanja. Prva grupa junadi domace simentalske rase (OS, n=7) prosecne mase 592,7 kg, druga grupa junadi melezi domace simentalske rase sa limuzinom (DSL, n=7) prosecne mase 589,9 kg. Izvrseno je pojedinacno merenje toplih polutki sa i bez bubreznog Ioja, mase unutrasnjih organa (bubrezi, jetra, pluca, srce, slezina), mase glave, repa, jezika, koze i obrezaka tj. misicnih delova od dijafragme. Na osnovu dobijenih rezultata istrazivanja utvrdeno je da su muska junad meleza domace simentalske rase sa limuzinom ostvarila veci randman za 4,55% u odnosu na junad domace simentalske rase. Kod junadi domace simentalske rase procentualno ucesce mase koze je vece za 1,6% u odnosu na meleze domace simentalske rase sa limuzinom. Takode i masa misicnih obrezaka dobijenih od dijafragme je veca za 0,09% kod junadi domace simentalske rase. Ukupna masa unutrasnjih organa junadi domace simentalske rase je veca za 0,36% u odnosu na unutrasnje organe meleza domace simentalske rase sa limuzinom. Posebno je izrazita razlika izmedu masa slezine. Kod junadi domace simentalske rase masa slezine je veca za 0,23% u odnosu na junad meleza domace simentalske rase sa limuzinom. Josipovic, Dusica Tornasevic Uvod Randman trupa (randman dveju polutki) iii rarndman klanja je procentualno ucesce trupa, odnosno polutki u odnosu na masu pre klanja. Prema tome, moze se govoriti 0 randmanu toplog trupa ili 0 randmanu hladnog trupa. Randman toplog trupa je za oko 2% veci nego randman hladnog trupa. Mnogi faktori uticu na vrednost randmana, a osnovni su su rasa, pol, starost, hranjenje i pojenje pre klanja, trajanje transporta pre klanja i nacin omamljivanja, iskrvarenja i obrade trupa. Pod junecim trupom smatraju se polutke zaklane junadi, bez obzira na pol, kod kojih su posle iskrvarenja odvojeni koza, glava, donji delovi nogu (u karpalnom i tarzalnom zglobu), unutrasnji organi grudne, trbusne i karlicne supljine, polni organi, bubrezni i karlicni loj, dijafragma, rep i kicmena mozdina, Na osnovu iznetog moze se reci da je randman, pre svega, kriterijum koji pokazuje masu trupa koja se dobije od jedne zviotinje, a indirektno ukazuje na vecu komercijalnu vrednost zive zivotinje. Materijal i metod rada Ispitivanje je sprovedeno na muskim tovnim junadima domace simentalske rase i melezima domace simentalske rase sa limuzinom. Tov junadi je obavljen na eksperimentalnoj govedarskoj farmi Instituta za stocarstvo. Formirane su dye ogledne grupe junadi priblizno iste mase pre klanja, prva grupa - junad domace simentalske rase (OS, n=7) prosecne mase 592,7 kg, druga grupa - junad melezi domace simentalske rase sa limuzinom (DSL, n=7) prosecne mase 589,9 kg. Klanje i primarna obrada junadi su izvrseni u eksperimentalnoj klanici Instituta. Nakon omarnljivanja, klanja junadi, iskrvarenja, skidanje glave, koze, evisceracije i rasecanja trupa izvrseno je pojedinacno merenje toplih polutki sa i bez bubreznog loja, mase unutrasnjih organa (bubrezi, jetra, pluca, srce, slezina), mase glave, repa, jezika, koze i obrezaka tj. misicnih delova od dijafragme. Rezultati ispitivanja i diskusija Prosecne vrednosti klanicnih rezultata ispitivane junadi domace simentalske rase i meleza domace simentalske rase sa limuzinom prikazane su u tableli I. Rezultati ispitivanja ukazuju da su muska junad meleza domace simentalske rase sa limuzinom ostvarila veci randman za 4,55% u odnosu najunad dornace simentalske rase. Kunze i sar. (1978) su takode ustanovili signifikantne razlike u ostvarenim randmanima klanja izmedu junadi simentalske rase (55,2%) i meleza sa limuzin rasom (57,5%). Prema Cobicu i sar. (1990) muska junad simentalske rase postigla su randman od 58,47% a melezi simentalske sa limuzin rasom 61,79%. Rezultati istrazivanja Nosal i sar (1992), Miscevica i sar. (1997), Aleksic i sar. (1997) takode ukazuju na veci randman meleza dornace simetalske rase sa limuzinom u odnosu na junad domace simentalske rase.

Takode i masa misicnih obrezaka dobijenih od dijafragme je veca za 0,09% kod junadi domace sarene rase.kod ostalih ispitivanih anatomskih delova nije bilo znacajnih razlika. U ogledu Cobica i sar. (1990) junad simentalske rase imala su relativno tezu glavu za 0,47% u odnosu na meleze domace sarene rase sa limuzinom i za 0,43% vecu masu koze, sto se slaze sa rezultatima ovog ogleda.

Jedino je utvrdena razlika izmedu mase slezine kod junadi domace simentalske rase je veca za 0,23% u odnosu na junad meleza domace simentalske rase sa limuzinom. Ovi rezultai su u saglasnosti sa rezultatima ispitivanja Cobica i sar. (1990). Ukupna masa unutrasnjih organa junadi domace simentalske rase je veca za 0,36% u odnosu na unutrasnje organe meleza domace simentalske rase sa Iimuzinom. Zakljucak U cilju ispitivanja faktora znacajnih za rezultate vrednosti randmana klanja, izveden je ogled sa dye ogledne grope junadi priblizno iste mase pre klanja. Prva grupa junadi domace simentalske rase (OS, n=7) prosecne mase 592,7 kg, druga grupa junadi melezi domace simentalske rase sa limuzinom (DSL, n=7) prosecne mase 589,9 kg. Takode i masa misicnih obrezaka dobijenih od dijafragme je veca za 0,09% kod junadi domace simentalske rase.kod ostalih ispitivanih anatomskih delova nije bilo znacajnih razlika. ukupna masa unutrasnjih organa junadi domace simentalske rase je veca za 0,36% u odnosu na unutrasnje organe meleza domace simentalske rase sa limuzinom.posebno je istaknuta razlika izmedu mase slezine, kod junadi domace simentalske rase je veca za 0,23%, u odnosu najunad meleza domace sarene rase sa limuzinom.

Ispitivanje faktora znacajnih za rezultate vrednosti randmana klanja muske tovne junadi... 13 INVESTIGATION OF FACTORS AFFECTING THE RESULTS REGARDING THE DRESSING PERCENTAGE VALUE OF MALE YOUNG CATILE OF DOMESTIC SIMMENTAL BREED AND CROSSBREDS OF DOMESTIC SIMMENTAL AND LIMOUSINE BREED S. Josipovic, Dusica Tomasevic Summary Carcass dressing percentage (dressing percentage of two carcass sides) or slaughter dressing percentage is proportional share of carcass, that is carcass sides, in relation to mass prior to slaughtering. Beef carcass consists of two carcass sides, regardless of the sex, on which, after bleeding, skin, head, lower leg parts (in carpal and tarsal joints), internal organs of the pectoral, abdominal and pelvic cavities, sexual organs, kidney and pelvic fat, diaphragm, tail and spinal cord were separated. In order to investigate factors significant for results related to slaughter dressing percentage, experiment with two trial groups of approximately same mass prior to slaughtering was carried out. First trial group consisted of young cattle of Domestic Simmental breed (DS, n=7) average mass of 592,7 kg, and the second group consisted of crossbreds of Domestic Simmental breed and Limousine (DSL, n=7) average mass of 589,9 kg. Mass of warm carcass sides with and without kidney fat, mass of internal organs (kidneys, liver, lungs, heart and spleen), mass of head, tongue, tail, skin and muscle cuts from diaphragm were measured. Based on obtained results it was established that male young cattle - crossbreds of Domestic Simmental breed and Limousine breed achieved better dressing percentage by 4,55% compared to young cattle of Domestic Simmental breed. In case of young cattle of Domestic Simmental breed, proportional share of skin mass was higher by 1,6% compared to crossbreds. Also mass of muscle cuts obtained from diaphragm was higher by 0,09% in case of Domestic Simmental cattle. For remaining investigated anatomical parts no significant differences were determined. Total mass of internal organs of young cattle of Domestic Simmental breed was higher by 0,36% compared to internal organs of crossbreds of Domestic Simmental and Limousine breed. The mass of spleen of young Domestic Simmental cattle was by 0,23% higher in relation to crossbred cattle.
