22 Summary I Legal and structure of zoonoses control are in place and work well. Measures due to the reduction of salmonellosis have been successful. The reduction of campylobacteriosis is very complex and there is the need of a whole food chain approach. Listeria will be more and more important in the future development of hygiene rules. Other microbiological risks become more important, because of changes in food-producing process and consumer behaviour.
23 Summary II Food producers are responsible for the food safety. The food chain becomes more and more complex Globalisation of food trade Urbanisation of people Concentration of retailers Higher competition between producers Authority's technical and financial resources are limited and decreasing. Consumer have to recognize their responsibility at the end of the food chain.
