2 Turkeys e have a number of Turkey options available this year, something for all budgets and needs. Our fundamental goal is to offer you a top quality Turkey at a fair price. This year we have Copas and locally sourced Free Range Bronze and Barn Reared White Turkeys however we re delighted to see the return of KellyBronze Turkeys to our Christmas Turkey line up. The KellyBronze Turkey is adorned with awards. Fans of KellyBronze include Jamie Oliver, Nigella Lawson, Michel Roux Jr and Delia Smith. Scan the QR code opposite to watch a short video of Paul Kelly talking to his Turkeys! Slow grown Turkeys reach maturity at 7 months compared to weeks for mass produced birds. Free Range Bronze Turkeys from 62 All our Turkeys are raised to higher welfare standards, are dry plucked and game hung. Turkey Cooking Tips 1. Take your Turkey out of the fridge first thing Christmas morning - or at least 2 hours before you re going to cook it. 2. Pre-heat your oven to 180 C. Place breast down in a large roasting tin. Cooking it upside down will keep the breast meat moist because the fat on the back of the bird trickles through to the breast. Add salt & pepper to the back of the turkey and half a litre of water in the roasting tin. Don t stuff the bird - cook your stuffing separately. 3. Put in the oven with no foil - adding foil at any stage will steam the skin and poach the meat. 4. Turn the Turkey over half way through the recommended cooking time - by holding the drumsticks with oven gloves. Season the breast with salt & pepper. 5. Check its temperature - 30 minutes before the end of the cooking time - by putting a thermometer half way through the thickest part of the breast. When the needle hits 65 C it s done. If it s not up to temperature, place back in the oven & check every 10 mins. 6. Take it out of the oven and leave for at least 30 minutes (preferably 60 minutes) before you carve it - it won t go cold. Don t be tempted to cover it. 2 M. Newitt & Sons - Festive Family Dining 2014
